I am searching for the recipe for the dressing/stuffing at Liberty Tree Tavern at Magic Kingdom. It was the best I've ever had! I want to make it for Christmas. It was so yummy! Anyone have it????

I tried making the cheddar cheese soup but it didn't come out quite as I remember it. Next time I'll have to use a different cheese and I always wonder if they leave some small (but important) detail out.

I have made both the Cheese Soup and the Fettuccine Alfredo, both are favorites at our house. The soup is a must every winter. When we went in Sept to Le Cellier, DH said that my batch is about as close as you can get. Funny story, we were reading the receipe and I had no idea was a roux was, I mean, really. So DH was on the internet trying to find out and I was running around cooking. The biggest thing is to make sure you cook out the starch so it doesn't taste starchy, it's wonderful!!

Has anyone made Le Cellier's Canadian Cheddar Cheese soup with potatoes?

I was thinking of adding some potatoes to it to make it more of a meal. I would cook the potatoes separately and just add them in at the end when you add the cheese...? Any ideas?

No not from San Angel Inn, the only soup recipe I could find from there was Sope Azteca. Was it a special?

You can also send an email to disney and tell them which restaurant and which dish and they will send you the recipe. I did that with Akerhaus for the cold dish they have with the Mickey pasta.

I think that would work very well, Amanda. I've made other soups with potatoes, and that's pretty much the technique. Just don't over-cook the potatoes or they will fall apart in the soup.

The new "Delicious Disney" cookbook has a "Loaded Baked Potato Soup" from the Carnation Cafe at DL. They use 4 large russet potatoes and 4 medium red potatoes, diced. They cook them in a stock pot over medium heat for 4 minutes (first they fry the bacon in it, then cook onions, carrots, & celery in the fat until the onions are translucent, then add the potatoes for the 4 minutes). They say to soak the diced potatoes in cold water until ready to use to keep them from turning brown.

HTH

On a side note, what does Disney have against Indexes? The last couple of cookbooks don't have indexes, and this one doesn't even list the recipes in the table of contents. The only way to find something is to guess if it is a "Disney Classic," "Fancy & Festive," "Fresh and Healthful," or some other designation and then flip through the whole section. Not convenient at all!!! I was trying to find Virginia's soup, and had to go through the whole book except wines & spirits and Desserts! Grrrr - now I am hungry. OK, end of rant.

Thanks for that information Pat! I appreciate it. And once my kitchen gets back into order, I shall be trying it out. I'm thinking of adding it to the St. Patrick's Day dinner we do every year.
